Apple Walnut Smoked Cheddar (Beehive Cheese)

I don't want to sound like a hipster, but I was into Beehive Cheese before it was cool. Many years ago, Beehive Cheese was a fairly small company—and the only way for most people to sample its wares was to order it online or travel through Utah.

But that's not to say that Beehive Cheese is an exceptionally fancy cheese. In fact, one of the reasons it's grown to be a national company (sometimes now even found in your local Walmart) is because it's a fairly accessible cheese. Beehive Cheese primarily makes "cheddar-style" cheeses from Jersey cows (which, its site alleges, are the cutest of all cows). The cheese isn't of the highest quality, but it's tasty, cheap, and no one will turn their nose up at it at your next party.

To start us off, I checked out their Apple Walnut Smoked Cheddar—probably one of the least objectionable of all cheese types. One of the great things about Beehive Cheese is that the flavors are pronounced; a small slice of the Apple Walnut and you're already being hit by the smoke. Once the initial taste dissipates, you're left with a creamy, sharp cheddar.

Beehive Cheese suggests pairing this with dark liquors and salty meats but I actually found their smoked cheddar to be best with tart (or even bitter) jams.

Physically, the Apple Walnut is a moderately dry cheddar and prone to crumble. Its taste isn't that of a sharp cheddar, and you might strain to get the hints of sweet apple. Overall, it's the perfect cheese for a dinner party that you want to spend exactly $5.49 on.
